Cornflake Cookies

Felix kicks off his 25 Days of Christmas Countdown with these Cornflake Cookies. I’m glad because they’re my favorite Christmas cookies, too. Three simple ingredients come together to make this perfectly crunchy, chocolate-y treat. I always stick mine in the refrigerator to harden quickly, then tuck them in a tin and stick them in the freezer so they don’t disappear right away.

Ingredients:
4 14-ounce Hershey’s chocolate candy bars
2 squares bittersweet chocolate
6 cups cornflakes

Break up the chocolate and melt over low heat in a large saucepan (or you can use a microwave or double-boiler). Remove pan from heat and add cornflakes. Stir until the cornflakes are completely covered in chocolate. Drop by teaspoonfuls onto buttered cookie sheets.

This recipe will make 4 dozen cookies.
